I'm starting to get Dreamcast setup in my cab and I want to know how to set it up.

I have the a lot of dreamcast roms. In each zip file there are three or so files, such as the gdrom and track files. Is there a way to have Gameex unzip these before running so I don't have to have them all unzipped all the time?

With Null-dc I know I don't need to mount the images, so any of those tools are unneeded. I just need to unzip the files then pass the gdrom file to Null-dc to get it to load.

Gameex supports 7zip. So you could always 7zip them

But id not recommend it.. They are rather large and it would take quite some time to unzip a game before it launches..

Why do I feel I have daja vu here?

do what you must.
