I'm trying to create a set of custom menus and I want my MAME menu to go directly to the All MAME Games menu. I can't see to figure out how to do this in the menu editor.

I'm not sure, I disabled MAME in my custom menus when they first came out because of this. I just set it up as another emulator. I've lost some of the MAME specific features, but it's worked to take me straight to MAME ALL.

I'm not sure if Tom has added the capability or not.

Otherwise, you might be able to if you disable all of the different Show MAME features, but I haven't tried this.

ehounder is correct. You can disable many of the display options through the Advanced Configuration in the Advanced Mame section.
