My apologies if this is common knowledge; I tried a search of the forums and faq but did not see what I'm looking for covered.

I just found, installed, and started playing with GameEx today. I don't have thousands of ROM's; I only have (and only ever expect to have) a small number. Is there a way to trim down the list of available roms that GameEx seems to know of to just the few that I have? I poked through some of the config files, but I'm not sure how much I can start to remove and how much difference it will make.

Figured I'd ask before I started cutting. Thanks!

There are a few filters that you can use to list games in various ways. The one you want to use will only display roms that exist. I believe the filter is called "validate roms".

You should use the Setup Wizard, or the Advanced Configuration program to make changes to the GameEx.ini. I wouldn't edit them by hand.

Wow, I didn't realize you were trying to edit them directly until I re-read the OP. While in some special instances it is no more difficult to edit the gameex.ini file directly, I would generally use the setup tools that Tempest mentioned.
