Is there a way to create a new lists of games, much like favorites, but for individuals? That way everyone that plays the cab can go right to their favorites. I

Yes. You need to create a MAME32 formatted list with all of the roms you want available. Then, put that .ini file in the directory you define in the gameex setup (e.g., c:\emu

mame\favorites). When you update your list, it will show up.

One caveat though. I think this only works for MAME roms, not the rest of your games.
