Look in the Advanced MAME Settings section of the MAME Settings section within the Setup Wizard.

I did - I looked there a few times, but if it's there I can't find it.  I assumed it would be in the enable/disable features section, but I can't see those particular items, nor some others I would like to hide.  Is it possible that I can't see it because I'm using GameEx Arcade and it's an abbreviated Set Up Wizard?

Can you please provide a screen capture of your GameEx Arcade Edition Setup Wizard Advanced MAME Settings? Below is what I show (highlighted in green):
