How can we edit GameEx AE's menu?

I understand AE is designed to be "plug and play," and that's a good thing. I'm wondering, however, if there's a way to directly edit the menu (knowing, of course, that doing so "voids my warranty").

I ask this because I have a cabinet in a rental house and would like it as stripped down as possible. I have disabled most menu choices and would like to designate the "All Games" (which I've renamed as "Arcade Classics") menu item as the default item instead of "Genres".

I've seen the CustomMenu config file but haven't messed with it. Is there where I might change the default starting item? Thanks again.

Unfortunately it is not editable. There have been several similar requests for being able to either flatten or enable/disable menus via a custom menu type editor:
