Not sure if I am just terrible at finding information, but there are two things I want to do with GameEx:

1) I've downloaded some video snaps recently and I find the volume to be too loud on them.  Is there any way I can adjust the volume of the snap videos without impacting all other sound volumes?

2) I plan on using GameEx for strictly game purposes, nothing else.  Is there a way to make the "Multimedia" not show on the start menu?

Thanks

To address the 2nd Q first - If you go through the Setup wizard page by page you will find that you can disable the multimedia settings (HTPC ? Multimedia Settings) and they should not show in the Start menu.  Alternatively, you can lock things down further and play with Interface mode (under Display settings). Per the description:

This setting changes the user interface of GameEx. Gamelauncher mode completely changes the way the user interface works is controlled and displays. It puts GameEx into a simple game mode, with simpler menus, simpler navigation, simpler navigating through your available game lists. Many of the menus are disabled by turning on this setting, and only games lists are available. Navigation is much simpler with paging by pressing left or right, and button 1 and 2 navigate the available lists. Button 3 launches game. Recommended for simple cab setups, where you want to lock things down or its for young children. It also supports low resolutions such as 320X240. Simple mode disables the menus in gameex so there is just a list and no horizontal or vertical menu. Paging can be one by pressing left or right. In addition the Shift1 (default control) key acts as a home button in simple mode. Simple mode offers all GameEx features but with very simple navigation.

I have not used this so I don't know what the behavior would be with using GameEx's intgrated support for Steam, Origin, and Uplay.

As fo r the 1st Q - You would probably have to edit each video file and resave them them using a 3rd party software. There are no settings in GameEx to control video volume and, if there were, it wouldf be a global setting.

Welllllllll, there is one setting in GameEx that affects video snap volume...

Go into Audio Settings > Audio in snap/preview videos

You cannot turn the volume down for video snaps, but you can turn it off. Otherwise, Draco is right; the only other way would be to edit the video files and lower the volume there.
