What are the best emulaters?

I am setting up Game Ex for the first time and I noticed that there are many different emulators you can choose between for each systems. I need some recommendations for the best ones. The emulators i plan on installing are....NES, SNES, Nintendo 64, Sega Genesis, Sega Saturn, Sega Dreamcast (nullDC), Sony PlayStation, Arcade (MAME), Game Boy Color, Sega Game Gear. I know it’s a lot of systems but if anyone can help it would be appreciated.

I would start with sites like NonMAME and NonMESS. They are a great source for best emulators for certain systems. Also there are many threads that will turn up using the search feature of the forums. I remember quite a few of them over the years.

Thanks for the help. Where can i download the N64 2012 Plug-ins? Also should i download "Project64" or "Project64k".

Now if I just downloaded it through GameEx does it already have the plug-ins? The one downloaded though GameEx is version 1.6. How do i check if i have the plug-ins.

In the case that i dont have the plugins, how can i just add the plug-ins.

The version that downloads through GameEx is not going to have the plugins. You should be able to follow the link I gave to access those. You will need to look at the program docs to tell you where to place the plugins although I believe they are in an installer so that should take any guess work out of the equation.
